Review
The present status of food-borne parasitic zoonoses in West Germany is characterized by a relatively high frequency of toxoplasmosis, sarcocystosis and Taenia saginata infections. From empirical data it can be estimated that 4% of the German population become infected per year by Toxoplasma gondii as well as by Sarcocystis species (S. hominis, S. suihominis). The number of T. saginata infected persons is reckoned at 900,000, which is equal to an average prevalence of 1.5%. Due to meat inspection and to modern methods of breeding and keeping pigs trichinellosis and Taenia solium infections have become rare diseases. According to eating habits there are only sporadic cases of fascioliasis and anisakiasis. Whether Diphyllobothrium latum and Opisthorchis felineus are still endemic, is unknown; it seems that the influx of refugees from areas of high endemicity never created new foci in West Germany.

Muscle samples from 890 slaughtered pigs were examined for the presence of sarcocysts. A high prevalence rate of 67.98% was observed. Two types of microsarcocysts were recorded. The sarcocyst wall of one type had redial striations and the other possessed hair-like villar protrusions. The species were identified as Sarcocystis miescheriana and Sarcocystis suihominis; there was a slightly higher incidence of the latter species (47.11%) than of the former (43.14%). S. suihominis has been identified for the first time from pigs in India.

Fecal specimens of 926 persons from Duilongdeqing, Milin and Linzhi counties of Tibet were examined by the zinc sulfate flotation method. The prevalences of Sarcocystis hominis in the three counties were 20.5%, 22.5% and 22.9% respectively (P greater than 0.05), with an average of 21.8%, and those of Sarcocystis suihominis were 0, 0.6% and 7.0% respectively (P less than 0.01). No significant difference in infection rate was found between different age or sex groups. Sarcocystis was detected in 42.9% of beef specimens from the market. Obviously, sarcocystis infection in Tibetans is usually caused by eating raw or undercooked beef or pork. The infected cases were generally asymptomatic, 9/10 and 5/5 of cases showed negative stool examination one month after being treated by sulfadiazine or finidazole respectively.

A total of 24 hybridoma cell lines producing monoclonal antibodies (mAbs) to Sarcocystis muris were established from 3 fusions performed on mice that had been immunized with total protein derived from cystozoites. In all, 19 mAbs were of the IgG1 isotype, 3 were of the IgG2a isotype, and 2 were of the IgG3 isotype. The reactivity of the mAbs with homologous and heterologous antigens was examined by an indirect fluorescent antibody test, an enzyme-linked immunosorbent assay (ELISA), and a dot ELISA. MAbs were directed against various structures of the cystozoite as revealed by different immunofluorescence patterns. In all, 12 mAbs recognized only antigens of S. muris cystozoites, whereas the other 12 mAbs also recognized various antigens of cystozoites of S. gigantea, S. tenella, S. arieticanis, S. capracanis, S. miescheriana, or S. suihominis. No cross-reactions with endozoites of Toxoplasma gondii were observed.

Topical treatment of cutaneous larva migrans with thiabendazole and cambendazole is briefly described. AIDS has focused attention on the coccidial parasites Cryptosporidium spp. and Isospora belli because they can be responsible for severe chronic enteritis in immunodeficient patients. The species formerly known as Isospora hominis--after detection of its life cycle--has now been correctly named Sarcocystis bovihominis and S. suihominis, respectively. In future, patients harbouring commensal strains of Entamoeba histolytica can be left untreated, since pathogenic strains can now be identified by polymerase chain reaction (PCR). The geographic distribution of malaria risk and drug resistance, side effects of antimalarials and recommendations for prophylaxis are discussed more extensively.

Sarcocysts of Sarcocystis miescheriana in the thigh muscles of pigs became non-infective to pups after heating infected pork in minute pieces at 60 degrees C for 20 min, 70 degrees C for 15 min and 100 degrees C for 5 min. Similar pieces of infected muscle tissues, when exposed to -4 degrees C for 2 days or -20 degrees C for 1 day, became non-infective to pups. The experiment suggests that pork containing sarcocysts of S. miescheriana, and possibly of S. suihominis, requires cooking at a minimum of 70 degrees C for 15 min or freezing at -4 degrees C for 2 days or -20 degrees C for 1 day for making it safe for consumption.

Monoclonal antibodies were raised against cystozoites of Sarcocystis muris and characterised. Twelve monoclonal antibodies reacted in the ELISA, Dot-ELISA and IFAT only with homologous antigen. The other twelve showed cross reactions of various degrees with cystozoites of S. gigantea, S. tenella, S. arieticanis, S. capracanis, S. miescheriana and S. suihominis. Proteins of S. arieticanis, S. tenella, S. gigantea, S. capracanis, S. muris and Toxoplasma gondii were compared by isoelectric focusing and showed pronounced differences.

The consumption of meat and meat products may result in parasitic infection in man. Trichinella spiralis infection can be very dangerous, but this parasite is now rarely encountered in the Netherlands; the same applies to Taenia solium. Taenia saginata is regularly detected but is not particularly harmful to the consumer. The pathogenicity of Sarcocystis bovihominis and Sarcocystis suihominis for humans remains uncertain. Toxoplasma gondii may give rise to severe problems, particularly congenital infections. It appears that freezing meat for a sufficient time, or heating to 70 degrees C core temperature, inactivate the parasites mentioned. Dry cured ham and fermented sausages present little danger. Further study of the survival of parasites in ' osseworst ', filet American and roastbeef is necessary.
